Kurobuta Pork Chops

Our dish of the month is Kurobuta Pork Chops a specialty of Chef Israel “Izzy” Reyes at Diamante Cabo San Lucas. Ingredients 4 double cut kurobuta pork chops 2 bunches of asparagus 6oz extra virgin olive oil Kosher salt Freshly ground pepper 2lb fresh figs 1lb brown sugar 4oz chopped ginger 4oz chopped garlic 4oz Ají Amarillo paste 6 russet potatoes ½ lb butter 2 cup whipping milk Salt to taste Pork Chops Preheat the oven to 350°F. Season pork chops with salt and pepper. In an ovenproof pan, put 1oz of olive oil and on high heat, sear the pork for about two minutes on each side, until nice and brown. Add a spoon full of butter and put into the oven for 9 minutes for a medium cook. Organic Fig Chutney In a large saucepan, heat 5oz olive oil over medium heat. Add the garlic, ginger and cook about 4 minutes. Add the figs and stir well, cook it for another 4 minutes. Add the brown sugar and Ají Amarillo paste, let it cook at a steady simmer for 60 minutes. Add a pinch of salt. Whipped Mash Potatoes Peel the potatoes and cut into 1-inch chunks. In a saucepan put whipping cream and ½ lb of butter, reduce to a half and reserve. Cook potatoes in a large pan of boiling salted water over medium heat for 20 minutes or until it is tender. Pass through a china cap strainer, helping yourself with a big spoon. Add whipped cream reduction and salt to your liking. Asparagus Grill with olive oil for 2-3 minutes. Season with salt and pepper. Serves 4 People

Pacific Tequila Shrimp With Cauliflower Puree

In honor of Tequila Day (July 24th) we’re happy to share a recipe for Tequila Shrimp and Cauliflower Puree from Chef Israel Reyes at Diamante Cabo San Lucas. Tequila Shrimp: 12 jumbo Pacific shrimp peeled and deveined 3 oz butter unsalted 1 oz extra virgin olive oil 0.5 oz garlic peeled and finely diced 0.5 oz parsley finely chopped 1 lime 2 oz tequila 12 pieces of baby corn 12 pieces of baby zucchini Salt and pepper to taste. Preheat a sauté pan with the olive oil. On medium heat, add shrimp and sauté for 1.5 minutes on each side. While stirring, add garlic and allow to cook for 1 minute. Continue to stir to ensure the finely chopped garlic does not burn. Add butter and allow to cook for another minute. Keep stirring. Add the juice of 1 lime, parsley. Remove the pan from the heat. Add the tequila. Allow to cook until the alcohol has evaporated. Season to taste with salt and pepper. Cauliflower puree: ½ cup diced white onions 1 fresh cauliflower (florets) 1 leaf of Napa cabbage diced 1 bay leaf 1 russet potato peeled and diced 1 oz butter unsalted 1 oz extra virgin olive oil 4 oz heavy cream Salt Pinch of nutmeg Heat a pan with olive oil and butter.  Sautee diced white onions; add diced leave of Napa cabbage, cauliflower florets; continue to sauté for 5 minutes. Add heavy cream, diced potato, bay leaf and cook for about 15 minutes or until the potato dices are soft. Allow to cool down for 5 min.Blend all ingredients until the puree is smooth. Season to liking with salt and nutmeg. Enjoy!

Cinco de Mayo Recipe from Chef Izzy – Mexican Street Corn on the Cob

Cinco de Mayo (Fifth of May) commemorates Mexico’s victory over the French army at the Battle of Puebla in 1862. In Mexico, Cinco de Mayo is celebrated with parades, dancing, mariachi bands, colorful festivals, and traditional Mexican food and drink. If you are celebrating at home, our Chef Israel (Izzy) shared one of his signature recipes you can easily follow: Mexican Street Corn on the Cob. At Diamante we are sourcing all the herbs from our organic garden! Serve 6 portions: INGREDIENTS 6 yellow sweet corn on the cob 1 tablespoon kosher salt 4 oz unsalted butter 4 leaves of Epazote (Mexican herb) Water for cooking (sufficient to cover the corn) 6 think wooden sticks 2 cups finely grated Cotija cheese 1 cup of Mayonnaise 3 tablespoon Salsa Valentina INSTRUCTIONS Place the corn in a pot and add water until the corn is completely covered with water. Add salt, butter and Epazote leaves. Allow to cook on medium heat for 15 minutes. Drain the water. Push the wooden sticks into the thickest center of the cob. Holding the cob on the wooden stick, spread mayonnaise on the corn and roll in to Cojita cheese. Place the corn on the cob on a plate and serve with Salsa Valentina.

Taking Care of your Skin While on Vacation: HydraFacial in Cabo

Tiger Woods Helps Diamante Launch Ocean Club

Diamante Cabo San Lucas members were treated to a special event on Friday, December 15th  when Tiger Woods traveled to Diamante to talk golf, hit some balls and help launch the new Ocean Club Residences. Tiger Woods and the TGR Design team had a very full day at the property.  After a quick lunch, Tiger entertained members and guests at TGR Design’s Oasis Short Course with a clinic where he wowed the crowd with his beautiful swing and accurate shots.  In between swings, he answered questions from the crowd, joked around and told stories from his youth and his time on the PGA Tour.  He was also candid about the challenges he’s facing as he competes against younger golfers (Tiger turns 42 on December 30) and admitted that he no longer is able to eat whatever he wants.  An ominous sky provided a dramatic backdrop and some rumbles of thunder, but the rain held off as Tiger continued to call out his shots – both long and short. After the clinic, Tiger joined Golf Magazine’s Travelin’ Joe Passov and GolfWeek’s Brad Klein at El Cardonal – the site of the first completed course by Tiger and TGR Design for a round of questions about his current and future projects. As the sun began to dip into the ocean, Tiger and the TGR Design team joined Diamante members poolside at the site of Diamante’s newest residence – The Ocean Club.  The team took a tour of the stunning model unit as they looked out to the beach while a live band played in the middle of the pool.  Members mingled, danced and gazed at a beautiful sunset. The final event of the evening was a delicious dinner and a fireside chat with Tiger and Diamante CEO and developer Ken Jowdy.  Tiger talked about his desire to create golf courses that families can play together and shared a memorable and entertaining story about hitting a hole-in-one as an 8 year old. As the evening came to an end it was clear this was a special day and one Diamante members would not soon forget.

Located at the southern end of the Baja California Peninsula in Mexico, Cabo San Lucas ranks as one of the best tourist destinations not only in Mexico, but also in the world. 1. The Weather If you like your holidays hot and sunny, it is hard to find anything better than Cabo San Lucas. In fact, the sun shines almost all year round, and the average annual temperature is 78 F. Temperatures during November- December, range between 60 F to 85 F. Most of this area’s annual rainfall occurs around September and October, so the chances your holidays will be rained on are pretty low. The Perfect Location Cabo San Lucas is at the very tip of Baja California, on the western coast of Mexico. Whale Watching Whale watching season in the Pacific Ocean off the Baja Peninsula and in the Sea of Cortez begins in December and carries through the winter months until the end of March. Every December, hundreds of whales come to Baja from the cold waters of Bering Sea to calve, feed, mate and play. Whale watching in Los Cabos is a very unique experience – because you can see up to 5 different whale types, with Grey Whale and Humpback Whale being among the most common one. 4. The Holiday Activities There is something very special about the holidays, particularly in México, where the festive season persists for close to two months. Las Posadas last for nine days, from December 16th through the 24th, and commemorate the journey of Mary and Joseph from Nazareth to Bethlehem. Nochebuena (literally “the Good Night”) is the Spanish word for Christmas Eve. Nochevieja, or New Year’s Eve, is one of the most important seasonal celebrations in Spanish-speaking countries. Whereas Nochebuena is traditionally spent at home with the family, Nochevieja is an occasion for going out. During Holiday season the center of San José del Cabo is beautifully decorated and features a big lighted Christmas tree in the center of the main square. On New Year’s Eve, a colorful display of fireworks will light up Medano Beach in Cabo San Lucas. This annual show can best be viewed from nightclubs, restaurants and resorts. Some resorts have their own fireworks that are equally spectacular. Diamante Cabo San Lucas is famous for their NYE fireworks. 5.
